Best Treats Ever


Delicious power; the best cocktail I ever had!





At this bay: the best fish I ever had, a skate wing!



Oke, this must have been the most amazing long weekend ever since I ate and drank the best things ever. And it was! We celebrated our little anniversary (8 years big time. We went for long weekend to the south of France. But the most sweetest thing is, that it was all a surprise for me. If you only knew how hard that was for my husband. He is really bad at keeping secrets. I do love you, Olaf! 

So I'll tell you about the best non alcoholic cocktail's, i tried two of them.  
The Strawberry Colada and the Delicious Power. And for the happy few of you I wrote down the ingredients: 

Strawberry Colada 
pineapple juice, fresh strawberries, coconut water

Delicious Power
          fresh strawberries, orange juice, vanilla extract, fresh ginger, 
                         cranberry juice and purelosophy power.

Purelosophy power, I had never heard of it. 
But now I know why I felt so good after drinking this cocktail.

And then this perfectly hidden bay where we had lunch on the beach. Can it get any better when your child is playing happily with the sand and you can eat the best fish and drink very good wine?  No, it can't get any better than that.

Well, there was only one thing that could have been better, and that was that the best fish was lying on the plate of my husband and not on mine.

It was a skate wing, that did the trick. I did have skate wing before, like with capers and butter, although it was a long time ago. But this skate wing recipe is a absolute winner. For sure the fish itself was just really fresh and then the combination with the soft creamy leek, softly braised in the best olive oil. So good. As you can see the fish is swimming in the olive oil, but I can tell you it did no harm to the delicate nutty flavor of the fish.
The fresh herbs, bread crumbs and the oven baked tomatoes, made it all complete. Of course, not to forget about the nice sun and the view.

Oke, dit moet wel het meest waanzinnige weekend zijn geweest, sinds ik zowel de beste cocktail ooit gedronken heb en de beste vis ooit gegeten heb. En dat klopt! We hebben ons kleine jubileum (8 jaar samen) groots gevierd. We zijn voor een lang weekend naar Zuid-Frankrijk geweest. Maar het leukste en liefste  was, dat het een verrassing was voor mij. Als je eens wist hoe moeilijk dat is geweest voor mijn man. Hij kan namelijk heel slecht geheimpjes bewaren. Ik hou van je, Olaf!


Ik zal je vertellen over de lekkerste non-alcoholische cocktails. Ik heb er twee geprobeerd: Strawberry Colada en Delicious Power. Vooral de laatste is bijzonder. Je hebt geluk want ik heb de ingrediënten opgeschreven.

                                     Strawberry Colada 
                      ananas sap, verse aarbeien, cocoswater


                                        Delicious Power
          verse aardbeien, sinaasappelsap, vanille extract, verse gember, 
                cranberry sap en purelosophy power

                purelosophy power, ik had er nog nooit van gehoord. 
            Maar nu weet ik waarom ik me zo goed voelde na het drankje.


Dan die goed verscholen baai waar we geluncht hebben op het strand. Kan het nog beter worden wanneer je kind lekker kan spelen op het strand en je zelf de lekkerste vis kan eten en een goed glas wijn kan drinken? Nee, echt niet. Beter kan niet. 

Alhoewel, er is 1 ding wat nog beter had gekund en dat was dat de lekkerste vis op het bord van mijn man lag en niet op die van mij.

Het was een rogvleugel. Ik had wel eerder rogvleugel gegeten, zoals het bekende recept met kappertjes en boter, alhoewel het wel lang geleden was.
Maar deze rogvleugel is toch echt een absolute winnaar. Het lag ook zeker aan het feit dat de vis echt heel erg vers was en in combinatie met die romige zachte gestoofde prei in olijfolie erbij. Echt goddelijk. Zoals je ziet zwemt de vis ook in olijfolie, maar dat doet helemaal niks af van de delicate nootachtige smaak van de vis zelf. Nog wat verse kruiden, broodkruimels en de oven gebakken tomaten wat het gerecht compleet maakte. 
En niet te vergeten natuurlijk, het zonnetje en het prachtige uitzicht. 
Wanneer gaan we weer?

Back on track with avocado toast








Avocado....that is my all time favorite of all the fruit and vegetables. All year round it is my best friend. It is perfect....the soft and creamy taste that makes it enough filling when you are hungry. And the nutty taste is exactly the earthy taste, which I adore.

For a while was I thinking of sharing this 'recipe' on my blog. But it is not really a recipe...I thought to myself.....but I do eat it almost every day.

This week I bought the book; 'It's all good' by Gwyneth Paltrow and what did I find:

Avocado Toast

'Truthfully, this is the one "recipe" I make and eat the most often! And it's not even a recipe. ....it's the avocado and salt that makes this like a favorite pair of jeans-so reliable and easy and always just what you want.'

What more can I say?

Nevertheless, I do make the 'recipe' a bit different than Gwyneth does.

Gwyneth uses Vegenaise on the toast, but I use mostly high quality olive oil on a warm toast and top it with slices of a perfectly ripe avocado, ever so gently pressing the avocado into the bread. Hit it with a pinch of Fleur de sel or Maldon salt.

That's it.

But actually there is even a bigger favorite, a rice cake (quinoa) with avocado.
I love the contrast between the crunchy bite of the rice cake and the soft creamy taste of avocado.
Just a rice cake, some avocado and a pinch of salt. 
Nothing more, nothing less. 
Try it. You will not regret it. 

The pictures are from our first day on the beach this year. I can't tell you how happy I am with the warmer weather. It was my worst winter period ever. But every cloud has a silver lining and I am back on track!

Het is perfect....het zachte en romige maakt het genoeg vullend wanneer je echt een beetje trek hebt en de nootachtige smaak is precies die aardse smaak, waar ik zo van houd.

Ik speelde al een tijd met het idee om dit 'recept' te delen op de blog. Maar het is niet echt een recept....dacht ik bij mezelf ....maar ik eet het wel bijna elke dag.

Van de week heb ik het boek gekocht:  'It's all good' van Gwyneth Paltrow en wat zie ik in het boek:

Wat heb ik daar nog aan toe te voegen ?

Toch maak ik het "recept" een beetje anders dan Gwyneth.

Gwyneth gebruikt op de toast Vegenaise, maar ik gebruik graag een goede olijfolie op een warme toast en beleg dan de toast met een paar plakken perfect rijpe avocado en druk het net een beetje plat in het brood. Maak het af met een beetje Maldon zeezout of Fleur de sel.

Dat is het...meer niet.

Maar nog een misschien wel grotere favoriet is de rijstwafel (van quinoa) met avocado.
Ik hou van het contrast van het krokante van de rijstwafel en het zachte romige van avocado.
Een rijstwafel, wat avocado en een snufje zout. En klaar.
Probeer het. Je zult er geen spijt van krijgen. 

De foto's zijn van onze eerste stranddag van dit jaar. Je kunt je niet voorstellen hoe blij ik ben met wat warmer weer. Het was echt mijn slechte winterperiode ooit. Maar na regen komt zonneschijn en ik ben weer back on track!

Broccoli Quiche






Leftover vegetables are great for quiches and omelettes. Because with quiches you can vary endless. Every now and then I have a new version on the table. There are only a few of mine quiches that have a fixed recipe. Because mostly i just improvise from what I found in the refrigerator. Just like now with the broccoli.

Whenever you make a quiche you should actually make 1 or 2 extra. It is so nice to have a back-up in the freezer. There are always these kind of days that it doesn't work out, or you don't feel like cooking. Therefore I try always to have soup and wedges of quiche in the freezer. Highly recommended!

Overgebleven groenten zijn perfect voor bijvoorbeeld quiches of boeren omeletten. Ik had nog broccoli liggen bijvoorbeeld.

Met quiches kun je eindeloos variëren, om de zoveel tijd komt er weer een nieuwe variant bij. Er zijn ook maar een paar quiches die echt een vast recept hebben bij mij,  maar vaak doe ik maar wat, ja precies met wat ik nog heb liggen. Zoals nu....met de broccoli.

Wanneer je een quiche maakt moet je er eigenlijk meteen 2 of 3 maken. Het is heel fijn om een back-up quiche in de vriezer te hebben. Je kent het wel van die dagen dat je gewoon geen zin of tijd hebt om te koken. Daarom probeer ik altijd soep en stukken quiche in de vriezer te hebben liggen. Echt een aanrader!

Rainy Days....








Rainy days are sort of perfect for baking, eating banana bread and playing hide and seek. It's one of the favorite games around the house here, nothing is more cute then playing hide and seek with a toddler. They are totally thrilled when you go and look for them and then the pleasure and fun when you have found them is amazing. (Sometimes he is even to excited and comes running towards me before I could look for him) There is one thing that I also thought was so cute and funny, which I was not aware of that other toddlers do the same thing.

Why do kids cover their eyes when hiding? 


I just came across an article about it. Cambridge researchers wanted to discover why, and here's a quote from their findings...

In both studies so far, when the children thought they were invisible by virtue of their eyes being covered, they nonetheless agreed that their head and their body were visible. They seemed to be making a distinction between their 'self' that was hidden, and their body, which was still visible. Taken together with the fact that it was the concealment of the eyes that seemed to be the crucial factor for feeling hidden, the researchers wondered if their invisibility beliefs were based around the idea that there must be eye contact between two people—a meeting of gazes—for them to see each other (or at least, to see their 'selves')."

How sweet is that? Children are fascinating. Eyes are the windows to the soul, right?

Don't forget the recipe below for the banana cake, it's easy and quick to make. And perfect for using up those very ripe bananas left in the fruit bowl.

Regenachtige dagen zijn perfect voor cake of taart bakken, en het opeten daarvan en verstoppertje spelen. Dit is een favoriet spelletje hier in huis, niets is schattiger dan verstoppertje spelen met een peuter. Ze vinden het buitengewoon spannend wanneer je ze gaat zoeken en dan het plezier en vreugde wanneer je ze hebt gevonden. (Soms houdt hij het gewoon niet meer en komt hij gewoon op je af rennen) Maar er is 1 ding wat ik ook zo lief vind. Blijkbaar doen andere kinderen dat ook.

Waarom houden kinderen hun handen voor hun ogen wanneer ze zich willen verstoppen?



Een onderzoeksteam van Cambridge wilden graag achterhalen waarom en hieronder vind je een quote uit hun bevindingen 

" Wanneer de peuters dachten dat ze onzichtbaar waren door het verbergen van hun ogen, wisten ze tegelijkertijd wel dat hun lichaam en hoofd zichtbaar was. Het lijkt er dus op dat ze onderscheid maken tussen hun 'ik' dat onzichtbaar is, en hun lichaam, dat nog wel zichtbaar is. Samengenomen met het feit dat het verbergen van de ogen cruciaal lijkt voor het onzichtbaar voelen, vroegen de onderzoekers zich af of het onzichtbaar voelen gebaseerd is op het idee dat er oogcontact moet zijn tussen 2 mensen om elkaar te zien ( de echte innerlijke persoon)" 

Interessant nietwaar? De ogen zijn de spiegel van de ziel. Kinderen blijven fascinerend. 

Vergeet niet het recept voor de bananen chocolade brood hieronder. Het is heel makkelijk en snel te maken. En perfect voor het opmaken van de (te) rijpe bananen uit de fruitschaal.

Our Daily Bread

Bread is one of the oldest prepared foods. We dutch people are real bread-eaters. We seem to be the only country (with Belgium) that eats bread for breakfast and as well lunchtime. It was just lately when I saw this interview with Alain Coumont, the person behind the now international chain of Le Pain Quotidien. It sells organic bread and cakes in a homey, rustic style. 


Alain Coumont learned about bread as a small child, standing on a chair every Sunday watching his grandmother bake bread. As a young chef in Brussels, Alain could not find the right bread for his restaurant.

Passionate about quality, he returned to his roots and opened a small bakery where he could knead flour, salt and water into the rustic loaves of his childhood.


It looks like the kind of guy that always has done it's own thing despite what others think. A bit against the grain. I like that. Or maybe it's just the french accent? Oh, I love that. You? Maybe it is just me. 


I always thought I would marry a french man, but I ended up with a kind of german husband instead. How did that happen? Sometimes I joke to O, my husband that he should talk french to me if he wants to seduce me.
But getting back on the interview, I thought it was great. It made me have a smile on my face afterward. I hope you will have too.

Comforting Ratatouille Soup




Concerning health, the new year didn't start too great here at home. With the colder days, temperatures below zero and lots of snow and ice. My son got the chickenpox, then straight after that he got the flu with high fever. Actually, I think I was the one who caused it, because I was feeling awful since the last days of 2012. Headaches, coughing like crazy and muscle pains. Now, half of January we are getting back on track, luckily. I know I'm not the only one feeling like this. So I thought of sharing so you feel not alone there. 
If you feel like this, don't you have cravings for soups aswell? I ate enormously amounts of different kind of soups. Lentil soup, green vegetable soup (like zucchini with broccoli), chickpea soup with leek,  tomato soup and ratatouille soup. These comfortable meals, are just the kind that make you feel instantly better and warm inside. I hope you will too. 
Below is my recipe for the ratatouille soup, it deserves a rank among my favorite soups.  I love the creamy taste that the eggplant gives. 

I know it's a bit late...but I wish you all the best for 2013. That it may be a healthy, successful and a happy year.

Red Cabbage Pizza

I know it is winter already. But when I made this surprisingly delicious red cabbage pizza for the first time it was this autumn. My memories went back to this nice afternoon in the forest with friends. Don't you love the autumn with it's lively orange and brown colors? Maybe I love the autumn so much because I am born in the autumn. It makes it special. 

This recipe is great after a long walk in the forest combined with a warm soup or a salad. I am so happy with this recipe. Red cabbage was always this vegetable that I didn't know what to do with it, apart from some nice salads.
I am not to keen on the traditional red cabbage with apple and clove that you often find as a side dish accompanied with a stew.

This recipe I like because the black olives, the anchovy and the balsamic makes the cabbage richer and far more surprisingly. It does not only taste good, but it looks great too!

Het is al lang winter. Maar het was afgelopen herfst, toen ik deze verassend lekkere rode kool pizza voor het eerst maakte. Mijn herinneringen gingen even terug naar deze fijne middag in het bos met vrienden.Houd jij ook zo van de herfst met de mooi gekleurde oranje en bruine bladeren? Misschien houd ik zo van de herfst omdat ik geboren ben in de herfst. Dat maakt het speciaal.

Dit recept is erg lekker na een lange wandeling in het bos. Eventueel met een warm soepje of een groene salade. Ik ben erg blij met dit recept. Rode kool was altijd zo'n groente waarvan ik niet zo goed wist wat ik er nu eigenlijk mee kon. Ik ben niet zo dol op het traditionele rode kool bijgerecht, met appeltjes en kruidnagel. 

Dit recept vind ik zo lekker doordat de combinatie van de olijven, de ansjovis en de balsamico, de kool een veel vollere en verassende smaak geeft.
En.....het smaakt niet alleen lekker, het ziet er ook nog eens goed uit.

Savoury Olive Cake for my little one










My toddler is a real picky eater. But olives, he is very keen on. It feels like he adored olives already since starting eating solid foods. And there is another thing he adores. Cheese. Cheese and olives. What can you do with that? A savoury olive cake. Aswell delicious for grown ups, served for lunch with a green salad or as an appetizer.
