Israeli salad


We ate tremendously amounts of hummus, israeli salads, chopped herbs, tahini, olives and shakshuka in the home land of the chef Yotam Ottolenghi; Israel. 
Our first morning we went to Manta Ray, a restaurant on Alma beach in Tel Aviv. It was there that I ate the best israeli salad, served as one of the many side dishes next to my poached egg. I was so amazed by how simple the salad was, but yet so tasty. 

Israeli salad, is a chopped salad. Distinguished by the tiny diced tomatoes and cucumbers. It is described as the most well-known national dish of Israel. I think I ate this salad every single day when I was in Israel. Nevertheless, we were astounded by the endless array of beautiful, healthy and creative salads, even for breakfast. I ended up eating salads for breakfast, lunch and dinner time.

Close to Manta Ray, is the nice neighborhood Neve Tsedek and on the other side the old harbor Jaffa, where we enjoyed good restaurants too. We definitely have to come back for more to explore both culinary and city wise. 

In Jerusalem we tried to get a table for lunch at the hotspot of this moment; restaurant Machneyuda, named after the nearby market Mahane Yehuda. This place is far from formal despite the top food served here. The dining areas are clustered around the open kitchen. When we were there there was loud music but with a good happy atmosphere. The staff as well as the chefs have been known to spontaneously burst into songs.Unfortunately we were not able to get a table, it was fully booked. We headed to the market and had our lunch at another restaurant.

In Israel I fell in love with za’atar, the amount of fresh herbs they use here, and of course the israeli salad and maybe even a little bit of Israel itself.

Note: try to find persian cucumbers or mini cucumbers, as they are juicer and have a more concentrated flavor than common cucumbers. So probably that was also the reason why this salad tasted so good. The key lies in the quality of the vegetables, like always.

Note: It’s a great salad for kids, mine is not so much into tomatoes, but in this salad they are so tiny and it’s so fresh with the lemon that even he likes it. I like to add radish and sometimes some carrot for the daily salad so he gets his vitamins.

We hebben een ongelofelijke hoeveelheid hummus, Israëlische salades, fijngesneden kruiden, tahini, olijven en shakshuka gegeten in het vaderland van de topkok Yotam Ottolenghi; Israel.
Op onze eerste ochtend in Israel, hebben we ontbeten bij restaurant Manta Ray; pal aan het strand (Alma Beach) in Tel Aviv. Het is hier dat ik de beste Israëlische salade heb gegeten. Geserveerd met talloze andere bijgerechten naast het bestelde gepocheerde ei. Ik was overdonderd door de smaak van zo’n simpele salade. 

Israelische salade, is een salade van kleine blokjes tomaat en komkommer. De kunst om de ingrediënten in de meest fijne, perfecte blokjes te snijden, wordt beschouwd als een teken van status onder Israelische koks. Deze salade is dagelijkse kost voor de mensen hier en wordt geserveerd bij elke maaltijd. Echter kun je hier ook andere geweldige mooie, gezonde en creatieve salades krijgen. Ze weten hier zoveel te doen met groenten, zelfs in de simpele restaurants. Op een gegeven moment at ik salade als ontbijt, lunch en avondeten. Heerlijk!

Dichtbij restaurant Manta Ray liggen de leuke wijken, Neve Tsedek en de oude haven Jaffa, waar we ook genoten hebben van fijne lekkere restaurants. We moeten zeker nog een keer terug om verder te genieten van de stad en het eten.

In Jeruzalem hebben we nog geprobeerd een tafel te krijgen voor de lunch bij de hotspot van het moment: restaurant Machneyudagenoemd naar de dichtbij gelegen markt Mahane Yehuda. Dit restaurant is niet formeel ondanks de topkeuken en het eetgedeelte zit rondom de open keuken gepositioneerd.
Toen wij er waren (om ter plekke nog te proberen een tafel te krijgen) was er vrij harde muziek. Zowel het personeel als de koks staan er om bekend om spontaan in zingen uit te barsten. Jammer genoeg hebben we geen tafel kunnen bemachtigen. 

In Israel ben ik ben verliefd geworden op za’atar, de hoeveelheid verse kruiden die gebruikt worden en op de Israëlische salade en misschien zelfs wel een beetje op Israël zelf.

Note: Probeer perzische komkommers of kleine komkommers te vinden. Deze zijn sappiger en hebben een meer smaak dan normale komkommers. (Ik heb ze zelf nog niet gevonden hier in Rotterdam!) Vandaar dat de salade misschien extra lekker smaakte. De kwaliteit van de ingrediënten is zoals altijd het belangrijkste.

Note: Het is een goede salade voor kinderen, mijne houdt niet zo van tomaat, maar in deze salade is het zo klein gesneden en met het frisse citroen dat zelfs hij het wel lekker vindt. Graag voeg ik er dan nog wat radijs en wortel aan toe, zodat hij de dagelijkse vitaminen binnen krijgt.

Healthy with parsley




It's already the end of 2013! This will be my last post for this year. It has been a year of disappointments and grief, but as well the year that we spend building our new home! In 2014 we will move to our new home, with a real kitchen! A big kitchen! A home with a garden! A garden where I will hopefully soon start growing vegetables and herbs. Maybe even get our own chickens? Getting curious? I'll show you pictures in the new year. 

It has been a dream project, where as well we shared joys and sorrows. It has almost become to an end. And therefore I will be able to work more on this blog. I have so many recipes I wanted to share with you lately, but I just didn't find the time to photograph it. 

For this last blogpost I have a recipe for a super healthy pesto, made from parsley. Did you know that parsley is one of the worlds healthiest foods? It's rich with chlorophyll, Vit. A, B,C and K and minerals like iron and potassium. 

Pesto you can use anytime, on bread, with raw vegetables, in your soup, with spaghetti for a quick meal. So make sure you always have a jar of homemade pesto in your fridge!

Het is alweer het einde van het jaar 2013! Dit wordt mijn laatste blog update voor dit jaar. Het was een jaar met veel tegenslagen en verdriet, maar ook het jaar dat we ons nieuwe huis hebben gebouwd! In 2014 zullen we verhuizen naar ons nieuwe huis. Een huis met een echte keuken! Een grote keuken! Een huis met een tuin! Een tuin waar ik hopelijk snel mijn eigen groenten en kruiden kan laten groeien. Misschien nemen we zelfs wel kippen? Word je al nieuwsgierig? Ik zal foto's laten zien in het nieuwe jaar. 

Het was een droomproject, waar ook veel lief en leed in is gegaan. Het loopt nu bijna ten einde, waardoor ik straks ook weer meer tijd heb om aan deze blog te werken. Ik heb zoveel recepten die ik graag had willen delen de afgelopen tijd, maar ik kon maar geen tijd vinden om het te fotograferen.

Voor jou heb ik in deze laatste blog een recept van een hele gezonde pesto, gemaakt van peterselie. Wist je dat peterselie echt super gezond is? Het is rijk aan chlorofyl, Vit. A, B, C and K and mineralen zoals ijzer en kalium. 

Pesto kun je voor van alles gebruiken. Op brood, als dip voor rauwe groenten, in je soep en bijvoorbeeld door de spaghetti voor een snelle maaltijd. Zorg dus altijd voor een potje met zelfgemaakte pesto in de koelkast!

Ik wens je een fijne Kerst toe en een spannend en zinderend nieuw jaar!
Een nieuw jaar met nieuwe foto's, nieuwe recepten en nieuwe verhalen.

Salad in France








Where as normally after a week I'm fed up with croissants, the most adorable cheeses and all other temptations that I can hardly resist, I thought I'll do it different this year. On our way to France, I had in the boot a jar with goij-berries, chia-seeds and black mulberries, just to name a few. My own sprouts muesli of amaranth and oats and packages almond milk. 
On the same way to France, I read the supplement of the NRC (dutch newspaper); 'Green is hot'. An article about healthy food is becoming more and more popular. This sentence made me laugh out loud; "There are woman that bring even açaí-berries and chia-seeds along their suitcase when going on holiday"
When I saw my neighbor on the camping with a jar with inca-berries on the table, I knew it was true. 

But it's not a real coincidence. My choice for the camping was made on the following description: small camping, ecologic swim pont, child friendly, yoga-lessons and vegetarian food. 
We've had a wonderful time on camping Brénazetin the Auvergne, the heart of France, run by Ron and Mariken. We have been taken full advantage of the fact that we could register ourselves for the lovely food and nice events organized, like jeu de boules evening with crêpes (for children) and a buffet (for adults).
My favorite made by Mariken was the salad with beetroot and carrot, served with herbs and flowers from her own garden. I don't think a have to say more; it was the perfect holiday.

Waar ik het normaal na een weekje Frankrijk wel gehad heb met de croissants, de heerlijke kazen en andere verleidingen die ik dan moeilijk kan weerstaan, besloot ik het dit jaar anders te doen. Op weg naar Frankrijk lag in de achterbak van de auto nu een pot met goij-bessen, chia-zaad en zwarte moerbeien om maar wat te noemen. Mijn eigen pakken spruiten-muesli van amarant en havervlokken en wat pakken amandelmelk.
Ook op diezelfde weg naar Frankrijk las ik de bijlage van de NRC; 'Groen is de mode'. Een artikel over dat gezonde voeding steeds populairder wordt. In het artikel stond dat er nu zelfs vrouwen zijn die op vakantie açaí-bessen en chia-zaadjes mee de koffer in nemen. Hilarisch. Maar dat het echt hip is zag ik aan mijn lieftallige buurvrouw op de camping met een pot inca-bessen op tafel.

Maar geheel toevallig is het niet. Mijn keuze voor de camping was ook gevallen op de omschrijving: kleinschalige camping, ecologische zwemvijver, kind-vriendelijk, yoga-lessen en vegetarisch eten. Daar komt natuurlijk niet Jan en alleman op af. We hebben heerlijk 11 dagen gestaan op camping Brénazet midden in de Auvergne, bij de eigenaren Ron en Mariken. We hebben hier gretig gebruik gemaakt van het feit dat je een aantal avonden kon inschrijven voor heerlijk eten en leuke avonden, zoals de jeu de boules avond met crêpes (voor de kinderen) en buffet voor volwassenen. Mijn favoriete salade van Mariken was de salade met wortel en biet, opgemaakt met bloemen. Alles uit haar eigen tuin. Meer hoef ik niet zeggen volgens mij; het was een topvakantie.
